The best part is, you make it from canned tomatoes so there is nothing to keep in the fridge, no tomatoes to chop for 37 minutes AND it is still FRESH! When the in-laws show up and you need a good-looking, half-healthy, delicious appetizer to bust out while you find something else to cook that everyone loves...this is it!up with this idea but now I can never eat jar salsa again. (Sorry if you love some kind of salsa in a jar, we all have our things.)
1 or 2 cans of diced tomatoes preferably the kind with the little green chilies (in the Hispanic aisle) to chop for 37 minutes AND it's FRESH! When the in-laws show up and you need a good-looking, half-healthy, delicious appetizer to bust out while you find something else to cook that everyone loves...this is it!

red onion
lime
fajita spices (optional) just a pinch
Cilantro
Green onion

Here's what you do:
Open the can of tomatoes
Strain it
Dice the veggies, however much you want of each in comparison to the tomatoes.
Add the diced veggies, squeeze in the fresh lime and a some garlic
Add the spices to your taste (if you want)
Stir it up! Das it!
Make it look good:
Pour it in a pretty bowl garnish with a slice of jalapeno and some fresh cilantro or fresh green onion if you have any and viola!
