No Mess Fajitas!

I don't know about you guys but I have been really jonesing for Mexican. I miss Taco Tuesdays, I miss sizzly fajitas, I miss spicey margaritas with a salty rim and I miss doing all of this with my friends at my favorite places. BUT, since we're quarantined I thought why not show you all how to make it all at home! SO---- Let's go to Mexico!!!



Since Mexican is my favorite, I’m sick and tired of cleaning my damn kitchen with all this cooking AND it’s my birthday week which means it’s also Cinco de Mayo, these NO MESS Fajitas, were a no brainer for this week’s episode of #SimplyBcookin! Fajitas are one of the first things I ever made so I’ve been cooking this “recipe” for a long time. BUT this no-mess method is brand new and way better! Recently my roommate and I had our parents over and my Mom suggested I put everything in the oven and bake it instead. THE WOMAN IS A FREAKING GENIUS! Everything came out hot and sizzling just like at the restaurant. Everything was done at the same time and I was free to drink my margarita rather than clean it all up because it’s all on one baking sheet and one pan! 


I also love that fajitas are self serve so you can just put options and let everyone make them how they want. You can make them traditionally with a tortilla wrap, throw everything in a bowl with rice, make a salad (which is what I like the best) or you can make some kind of "paleo wrap" if you want to be low-carb and still have a wrap. On the show, I did an egg wrap version which I'll explain here with my "un-recipe."


Prep Time: 20 minutes

Cook Time: 20 minutes


Here's what you need with suggested other options:


Your Choice Protein:


  • Steak

  • Chicken

  • Tofu

  • Pork

  • Shrimp

  • Fish


Veggies:

  • Tri-colored Peppers

  • Onions Red, white, or yellow

  • Broccoli

  • Mushrooms



Spices:

  • 1/4 tsp Cumin

  • 1 tsp Chili Powder

  • 1/2 tsp Cayenne Pepper

  • 1 tsp Paprika

  • 1tsp Onion Powder

  • 2 tsp Garlic

  • a bunch of fresh Cilantro (for seasoning and garnish) or 1 tsp for seasoning

  • 1 tsp Salt

  • 1tsp Pepper



Fixin's

  • Lettuce

  • Tomato

  • Green Onion

  • Avocado

  • Jalapenos

  • Sour Cream or Greek Yogurt

  • Refried Beans

  • Salsa

  • Tortilla Chips

  • Rice

  • Fresh Cilantro

  • Fresh Lime cut in wedges


"Tortilla"

  • Corn or flour tortillas

  • Lettuce Wrap

  • or Egg Tortilla (egg)


How to make it:

Preheat your oven to 425.

While you're waiting for your oven to preheat slice your meat and veggies into strips.

Add all seasonings in a bowl and mix evenly. This will be your fajita seasoning for your meat and veggies.


Place your veggies on a baking sheet. I like to use a reusable silicone mate for even easier cleanup. Drizzle veggies with olive oil and seasoning. Stick the veggies in the oven when it's hot and set a timer for 20 minutes.



While your veggies are cooking add olive oil to a pan and turn the heat on medium. When the pan is hot add about a clove or a teaspoon of garlic powder and cilantro to the hot oil. Add your protein and sprinkle with fajita seasons. Saute a few minutes on each side until done.

The veggies should be done in about twenty minutes depending on how much they are spread out on the sheet and how much you're cooking. They should be browned and sizzling when done.


That's IT!





If you want to make the egg tortillas here is how:


Crack an egg or two and scramble it with salt and pepper (one egg makes about 2 tortillas)

Get a pan (about the size of how big you want your tortilla) nice and hot with butter.

Pour a tiny bit of egg and swirl around the pan to cover in a thin layer.

Repeat until the pan is covered with a thin layer of egg.

The egg should be about as thin as a tortilla or a crepe.

Flip and cook each side. Usually about a minute or two on each side.

***Be VERY careful when you flip it.

Remove from pan and it's done! You can leave them out and cover so they stay warm.
